  • 3 tablespoon mascarpone
  • 2 teaspoon chives, roughly chopped
  • 1 1/2 teaspoon dill, roughly chopped
  • 2 teaspoon lemon juice
  • sea salt, cracked black pepper, to taste
  • 1 slice baguette (20cm long)
  • 1 handful watercress
  • 90 gram hot smoked salmon fillet, skin removed, flesh flaked
  • lemon quarter, to serve

Cooking Method

1. Place mascarpone, chives, dill and lemon juice in a bowl; whisk to combine. Season with salt and pepper.

2. Slice baguette lengthways, leaving it joined along one side.

3.  Spread mascarpone mix over baguette.Top with watercress and salmon. Serve with pepper and lemon quarter.
